Organic Chestnut Honey
Harvested in late June and July in the Varaita Valley. Dark amber color, intense, aromatic, and pungent aroma. Intense flavor with a slightly bitter aftertaste. Rich in mineral salts and tannins. May crystallize into large crystals.
PAIRING
Perfect paired with spicy and mature cheeses or in plain yogurt.
When the flowers begin to bloom, the hives are placed amidst chestnut groves; the honey is harvested shortly before the end of the flowering period to obtain an exceptionally pure monofloral honey.
We bring the honey to the right moisture level before extraction, ensuring the integrity and long-term preservation of the product. Honey extraction is performed by cold centrifugation to preserve its nutritional value and organoleptic characteristics.
We filter the honey through fabric filters to remove any residual wax or other impurities. We store the honey in stainless steel containers and bottle it by hand.
